Out of interest, how does the human mind transfer from a human to an
animal?

LOL!
Maybe St. Peter would know, John.
"23 But he turned, and said unto Peter, Get thee behind me, Satan: thou art
an offence unto me: for thou savourest not the things that be of God, but
those that be of men."
Matt 16:22-23 (KJV)

Matt 16:22-23 (KJV)
Which in no way answers the question I asked.

When He arrived at the other side in the region of the Gadarenes, two
demon-possessed men coming from the tombs met Him. They were so
violent that no one could pass that way. 29 “What do you want with us,
Son of God?” they shouted. “Have you come here to torture us before
the appointed time?”

30 Some distance from them a large herd of pigs was feeding. 31 The
demons begged Jesus, “If you drive us out, send us into the herd of
pigs.”

32 He said to them, “Go!” So they came out and went into the pigs, and
the whole herd rushed down the steep bank into the lake and died in
the water. 33 Those tending the pigs ran off, went into the town and
reported all this, including what had happened to the demon-possessed
men. 34 Then the whole town went out to meet Jesus. And when they saw
Him, they pleaded with Him to leave their region.

Matthew 28:34

Now how is it possible for the men's human nature to end up in a herd
of pigs?

The word "devil" has been used as a translation for two
Diamonion and Diabolos. The first word should be translated
"demons." It was applied to those diseases (mainly mental
disorders) which Jesus miraculously "cast out" of
persons.
If you want my beliefs on this subject see them at :
http://www.antipas.org/pdf_files/key_to_the_scriptures.pdf
Bottom of page 118 and 119.

I tried to bring it across but as they are double-sided pages it doesn't
work.

Interesting summary but it doesn't work. The author attempts to
explain the devil as being sin.

Two immediate points to bear in mind, there may well be more.

Jesus was tempted by the devil. Now if this was simply human nature,
then it wouldn't have been described as a single event.

And how does it explain the following

And there was war in heaven. Michael and his angels fought against the
dragon, and the dragon and his angels fought back. But he was not
strong enough, and they lost their place in heaven. The great dragon
was hurled down–that ancient serpent called the devil, or Satan, who
leads the whole world astray. He was hurled to the earth, and his
angels with him. (Revelation 12:9)

Those angels are demons.

It does for me, John, along with other Christadelphian very plausible and
logical explanations.

It is if it all fits, not just in part.

What about the devil (human nature) being bound for a 1000 years then
being released to declare war on the saints? If it was just human
nature, that would be there all the time, surely?

Well you know the story

http://www.biblegateway.com/passage/?search=Matthew+4%3A1-11&version=NIV

Was Matthew lying when he described these events, all over a short
timeframe?

Had it merely been human nature as you say, Jesus would have had these
temptations throughout his ministry, possibly on a daily basis.

As it was, God allowed Jesus to be tempted by the devil before the
start of his ministry, in order to strengthen him for the task ahead.
